Thomas Perseval works 6 parcels over 2.5hectares in the village of Chamery on thenorthern side of the Montagne de Reims.His vines are planted in predominantly sandy soils with some clay and limestone, andthe gentle northern and eastern slopes helpretain freshness. Though the family have beenploughing the soil since the 90s, it was a stintwith a biodynamic estate in Burgundy thatconvinced Thomas to switch to full organicfarming and he has been certified since 2012.Since 2014, all of Thomas’ wines are single vintage and zero dosage. The ‘La Pucelle’ is a single vineyard cuvee made with 90% Pinot Meunier and the rest Pinot Noir. Concentrated, complex and highly textured.
