Calvados produced by seventh-generation distillers Jean-Michel, Emmanuel, and Jean-Gabriel Camut in the Pays dAuge region of Normandy, France, at Domaine de Semainville
Distilled from 100% apples grown in orchards planted in thehautes-tigesstyle; many of the apples are heritage varieties
Cider is fermented in wood for 1011 months
Twice distilled on copper pot stills fueled by wood
Aged 3540 years
Reduced with rainwater and aged in large vats and tonneaux made primarily of Limousin oak and filled no higher than 75% full to promote oxidation; no new wood is used
Browned butter and walnut rancio on the nose. A mineralic palate speaks of candied apple, black tea, and dehydrated lemon. Cigar spice and a touch of orange come through on a sprightly finish.
40% ABV
