The Aramasa Private Lab Nirukame (often called Nirvana or Niragame) is a “modern-traditional” hybrid. It is a Bodaimoto style sakean ancient brewing method from the 14th centuryreimagined with a low-alcohol profile and light effervescence.

Brewing Method:Bodaimoto, which involves soaking raw rice in water to create a natural lactic acid starter, combined withKioke(wooden vat) fermentation.

Subtle notes ofmuscat grapes, lime zest, and white flowers, with a distinct lactic “yogurt” undertone from the Bodaimoto process. Very clean with acrisp aciditythat cuts through the sweetness, leaving a refreshing aftertaste.

Niragame is a seasonal release and is famously difficult to find outside of specialty boutiques.
