HVE3 (Haute Valeur Environnementale)

()

At the heart of Touraine Chenonceaux, Loire, south-facing overlooking the Cher, which shows the ancient prestigious terroir character. Everthing done slowly, maceration and fermentation at low temperature to preserve the most subtle nuances of minerals of the site. It was matured 8 months on lees, which shows ample aromatics and remarkable finesse on the finish.

For over thirty years, Francois Gilbert and Philippe Gaillard have been associated with wine. They are the wine critics and established the Chateau Gilbert & Gaillard together. 2022 they bought their second vineyard, Chteau de Thse, formerly known as Domaine du Bouc.
Philippe Gaillard grew up in the neighbouring village and often dreamed about this property, located on one of the most prestigious vineyard sites in the Cher valley.
Its 14 hectares of vines extend over the southern slopes of this tributary of the Loire, allowing the chateaus vines to produce some of the earliest ripening fruit in the Cher valley.

Appellation:
AOC Touraine Chenonceaux, Loire

Country:
France

Type:
White/Blanc (Still)

Terroirs:
The harvest comes from a very fine siliceous terroir which allows the Sauvignons to express a very refined mineral character.

Grape Varieties:
Sauvignon Blanc

Alcohol Content:
12.5%

Volume:
750mL

Vinification:
Vinification is slow at low temperatures to preserve the mineral aromas which make this terroir unique. Aging in Amphora. The lees are kept in natural suspension, which preserves the wine’s freshness and gives it roundness and suppleness.

Tasting Notes:
Very pale yellow color. Delicate nose combining ripe grapes and citrus tones. Discreet mineral touch. On the palate, a very nice texture, lots of silkiness. Intense aromas.

Food Pairing:
Will go perfectly with a fine-fleshed fish like Zander.
