The 2021 LAncestral Ros is made with Sumoll grapes and produced by the ancestral method with only 12.5% alcohol and a pH of 3.02, trying to show the grape how it is. Sumoll is a difficult variety, and not every year do all the grapes achieve good ripeness in health.

Winemaking:
Manual harvest. Direct pressing of whole grapes and fermentation in concrete deposits using indigenous yeast.The fermentationfinishs in bottle allowing carbon dioxide to be produced by the natural sugars found in the grapes. No filtering, no fining.

8C – 10C

Tasting Note:
Snazzy expression of Sumoll grape variety. Sour cherry and pomegranate aromas. On the palate its juicy and creamy along with a touch of rusticity. Good structure and long finish.

The 2021 LAncestral Ros is a wine to drink young, electric with abundant bubbles. It’s refreshing with citrus notes, a hint of rubber and an herbal touch. 15,000 bottles produced. It’s sold without appellation because they wanted a young and fresh wine, not with the minimum of time required by the classic Peneds appellation.
