Elios is 100% Alsatian Pinot Noir, with elevage in neutral oak. A lithe wine resting on a supple yet structured base. Lightly bubbly on opening from trapped CO2, let this wine rest for a moment before diving in to its refreshing profundity, with notes of leather, pepper, dark cherry, humus and a touch of earth. Enjoy this with a lovely roast beef, late-night dim sum, or tofu scramble with plenty of ginger.

Quiet and modest, the stealth natty secret of Alsace…Jean-Marc Dreyer is the biodynamic Sufjan Stevens circa 2007, ready to bring you to tears and take you to places you’ve never been before. Singular, electric wines, Jean-Marc’s style is always present in his work, particularly his macerated whites and ethereal Pinot Noirs. Through prolonged maceration, Jean-Marc minimizes the risk of oxidation and defaults, thereby paving the way for zero sulfur beauties with breadth of flavor and longevity. We are so pleased to be able to share these wines with you for the first time in NYC.
