After a hiatus in 2024, were back with our annually biannual Pines beer. Letting spring sprung into early October, the pine tips were much more developed. Weve reduced the base beer to 8.5%, using only pale and wheat malts, allowing the pine flavours to really shine. After ferment, fresh, 1 and 2 year old toasted pieces of timber were infused. Combining all weve learned about using pine from the last few years, weve come closer on a base framework that really promotes the unique flavours of native pine.

Herbal, sappy and woody, those really unique Australian flavours dominate the aroma. Some subtle spices, with cardamom, mint and eucalyptus are also in the background. Flavours of pine, resin and vanilla through the mid palate. The finish is peppy, with some fresh tannin, woody bitterness and herbal spice that develops
