TheAramasa Private Lab Amaneko(known as the “Flax Cat”) is the most experimental and unique offering in the Aramasa lineup. It is distinguished by its use ofwhite koji(shochu koji), which imparts a high concentration of citric acid, resulting in a profile more reminiscent of a crisp white wine than traditional sake.

An uplifting nose offresh pomelo, kabosu citrus, green apple, and juicy nashi pear, with subtle herbal and cedar notes.

On palate, It is light and taut with a signaturegrapefruit-like acidityand a gentle umami finish.
