Like the majority of wine properties in Burgundy, Domaine Nollat is specifically family-owned. After Flix Nollat, its creator in the 19th century, five generations have succeeded one another at the head of the twenty-hectare farm.
In 1980, Michel Nollat had an authentic stone vaulted cellar dug under the property and in 2007, the estate acquired an ultra-modern vat room equipped with forty thermo-regulated stainless steel vats and a cellar dedicated to tasting.
Since 2012, the 6th generation, Sbastien Nollat has been in charge of viticulture and winemaking while his cousin Sophie manages the commercial side.
The average age of the vines is between 60 and 70 years old. They do not wish to leave strong imprint of the oak on their wines, the reds are aged in French oak barrels with 30 to 50% new barrels. Bottling takes place after 15 to 18 months of aging. For the whites, the juice completes its fermentation in stainless steel vats or in oak barrels for the greatest appellations.
